北京有什么美食啊,北京四大名菜排行?

西施舌

西施故里有一种点心被称为“西施舌”。糕点师用吊浆技法,先用糯米粉制成水磨粉,然后再以糯米粉为包入枣泥、核桃肉、桂花、青梅等十几种果料拌成的馅心,放在舌形模具中压制成型,汤煮或油煎均可。这种点心特色颜色如皓月,香甜爽口。此餐,还有一道以海鲜贝类牙蛤或沙蛤制成的汤类,也被子赐以“西施舌”的美名,相传唐玄宗东游崂山时,厨师给他做了这道汤菜,唐玄宗吃后连声叫绝。可见此菜菜美味非同心响。这道汤菜,汤汁腻滑,品质爽滑,味道鲜美,有“天下第一鲜”之称。

贵妃鸡

这是上海名厨独创的一道川菜肴。它是用肥嫩的母鸡作为主料,用葡萄酒作调料,成菜后酒香浓郁美味醉人,有“贵妃鸡”之意。在西安还有一种“贵妃鸡”。它以鸡脯肉、葱末、料酒、蘑菇等为馅的饺子,形似饱满的麦穗,皮薄馅嫩,鲜美不腻。贵妃鸡肉质极为鲜美,既有土鸡的香滑,又有野鸡的结实,更有飞禽的美味,是一种理想的营养滋补佳品,被美食界誉为“禽中极品”。我国著名经济动物学家、中山大学辛景熹教授称赞:贵妃鸡的品质、美味与孔雀不分仲伯!

貂蝉豆腐

又名“泥鳅钻豆腐”。以泥鳅比喻*滑的董卓,泥鳅在热汤中急得无处藏身,钻入冷豆腐中,结果还是逃脱不了烹煮的命运。好似王允献貂蝉,巧使美人计一样。此菜豆腐洁白,味道鲜美带辣,汤汁腻香。民间小吃中还有种“貂蝉汤圆”。传说王允请人在普通的汤圆中加了生姜和辣椒。董卓吃了这种洁白诱人、麻辣爽口、醇香宜人的汤圆后,头脑发胀,大汗淋漓,不觉自醉,被吕布乘隙杀了。

昭君鸭

传说出生在楚地的王昭君出塞后不惯面食,于是厨师就将粉条和油面筋泡合在一起,用鸭汤煮,甚合昭君之意。后来人们便用粉条、面筋与肥鸭烹调成菜,有称之为“昭君鸭”,一直流传到21世纪。在西北地区还流行一种以王昭君的名字命名的“昭君皮子”是人们在夏日常吃的酿皮子。其做法是将面粉分离成淀粉和面筋,并以淀粉制成面条,面筋切成薄片,搭配并食,并辅以麻辣调料。
